Cute mini red velvet cupcakes with cream cheese frosting

I love making everything mini.. Why you ask, well I love trying a bit of everything and plus its a guilt free treat!

This year I donated 300 mini cupcakes to the Heart Actually Charity Gala here in Perth, I wanted to give something back and help raise funds for such an important cause.  This is my go to recipe, I adore red velvet with cream cheese frosting (one of my many vices)

I literally have made about 1000 of these in the past year – so this recipe is a sure thing!

Makes 48

  • 2 ½ cups plain flour, sifted
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 120g butter, at room temperature
  • 1 ½ cup caster sugar
  • 2 eggs
  • 2 tablespoons coco powder
  • 5 drops red gel
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup butter milk
  • Love heart sprinkles

Frosting

  • 100g butter, soften
  • 250g cream cheese
  • 1 cup pure icing sugar
  • 1 teaspoon vanilla extract

Steps

  1. Preheat oven to 180c. Place mini cupcake wrappers into mini cupcake tray
  2. Sift together the flour, baking powder and salt into a medium bowl. In a small bowl, mix red gel and coco powder together. Set aside.
  3. Using a mix master, beat together butter & sugar until light and fluffy for approx. 3 minutes. Then add one at time 2 eggs, then vanilla and red coco paste.
  4. Add one third of the flour mixture, beat well and then beat in half of the butter milk.
  5. Beat in another third of flour mixture, then second half of buttermilk, then add the last of the flour mixture; beat until well combined.
  6. In a small bowl, mix vinegar and baking soda. Add it to the cake batter and stir well.
  7. Evenly divide batter between mini cupcake wrappers. Bake for approx. 10-15 minutes or until a skewer inserted into centre comes out clean.
  8. Cool mini cupcakes on wire rack then place in fridge

Frosting

  1. Using a mix master, whip together butter and cream cheese; slowly add icing sugar until all of its combined. Add vanilla extract and mix well. Beat on high 3-4 minutes until the frosting is fluffy.
  2. Place in a piping bag and swirl onto cooled mini red velvet cupcakes. Decorate with love heart sprinkles.
